To prove your willingness and loyalty to the order, your middle finger is removed. If it wasn't cut off, then whenever the hidden blade came out it would cut right into your hand. Ezio got a remodeled version of the hidden blade so he got to keep his finger.

Malik and Kadar were left to fight off many Templars, which was the death of Kadar. Malik managed to retrieve what they'd come for and flee, but not without a severe wound to his arm.
